Amaranth is a versatile ingredient that can be added to salads, soups, stews, casseroles, and desserts. It has a crunchy texture and a delicious nutty flavour. To cook, add 6 cups of water to every one cup of amaranth. Boil water for 15-20 minutes, stirring occasionally, drain, rinse and enjoy.
