Gluten Free Custard Cookies Recipe

INGREDIENTS:

  • 1 1/2 cups YesYouCan Self Raising Flour
  • 125g softened butter or margarine
  • 1/2 cup caster sugar
  • 1/2 cup gluten free custard powder
  • 1/3 cup milk
  • 2 tsp vanilla extract

DIRECTIONS: 

  1. Preheat oven to 180°C and line baking trays with baking paper.
  2. Beat butter and sugar until light and creamy.
  3. Add custard powder and YesYouCan Self Raising Flour. Mix until crumbly.
  4. Add milk and vanilla extract. Mix until a soft dough forms. If the dough still feels dry, add an extra 1–2 tbsp milk.
  5. Roll dough into balls and place onto prepared trays, leaving space between each cookie.
  6. Gently flatten with a floured fork.
  7. Bake for 14–16 minutes or until lightly golden around the edges.
  8. Allow cookies to cool on the tray for 5 minutes before transferring to a wire rack.
