INGREDIENTS:
- 1 1/2 cups YesYouCan Self Raising Flour
- 125g softened butter or margarine
- 1/2 cup caster sugar
- 1/2 cup gluten free custard powder
- 1/3 cup milk
- 2 tsp vanilla extract
DIRECTIONS:
- Preheat oven to 180°C and line baking trays with baking paper.
- Beat butter and sugar until light and creamy.
- Add custard powder and YesYouCan Self Raising Flour. Mix until crumbly.
- Add milk and vanilla extract. Mix until a soft dough forms. If the dough still feels dry, add an extra 1–2 tbsp milk.
- Roll dough into balls and place onto prepared trays, leaving space between each cookie.
- Gently flatten with a floured fork.
- Bake for 14–16 minutes or until lightly golden around the edges.
- Allow cookies to cool on the tray for 5 minutes before transferring to a wire rack.
