Sprinkle Waffle Sandwiches

Ingredients:

Waffles

  • YesYouCan Buttermilk Pancake Mix
  • ½ cup water (half of pancake amount)
  • 1 tbsp vegetable oil (optional, for crispiness)

Fillings

Option 1 — Ice Cream

  • Vanilla ice cream (slightly softened)
  • Rainbow sprinkles

Option 2 — Whipped Cream

  • 1 cup thickened cream (or dairy-free alternative)
  • 1–2 tbsp icing sugar (optional)
  • Rainbow sprinkles

Directions:

  1. Prepare the batter
    In a mixing bowl, combine the Buttermilk Pancake Mix and ½ cup water. Mix until smooth. The batter should be thicker than a regular pancake batter. Stir in vegetable oil if using.
  2. Preheat waffle iron
    Heat your waffle iron according to the manufacturer’s instructions.
  3. Cook the waffles
    Pour the batter into the waffle iron and spread evenly. Cook for 3–5 minutes, or until golden brown and crisp. Remove and allow to cool slightly.
  4. Prepare fillings
  • For the ice cream version, allow the ice cream to soften slightly.
  • For the whipped cream version, whip the cream (and icing sugar if using) until soft peaks form.
  1. Assemble waffle sandwiches
    Cut waffles into halves or quarters.
  • For the ice cream version, place a scoop of ice cream between two waffle pieces.
  • For the whipped cream version, spoon or pipe whipped cream between two waffle pieces.
  1. Add sprinkles
    Roll the exposed edges of the filling in rainbow sprinkles.
  2. Serve
    Serve immediately for best texture. Ice cream version is best eaten straight away, while whipped cream version is best enjoyed fresh.
