Ingredients:

1 ripe banana, mashed

2 tbsp coconut sugar (or sweetener of choice)

1 tsp baking powder

1/2 tsp cinnamon

Pinch of salt

3/4 cup plant-based milk (adjust as needed)

1 tbsp neutral oil (like rice bran or canola)

1 tsp vanilla extract

Optional: 1 egg or flax egg for extra fluffiness
Instructions:

In a bowl, mix sorghum flour, baking powder, cinnamon, salt, and sugar.

In a separate bowl, whisk mashed banana, milk, oil, and vanilla. Add egg if using.

Combine wet and dry ingredients. Let batter sit for 5 minutes to thicken.

Heat a non-stick pan over medium heat. Lightly grease.

Scoop 1/4 cup of batter onto the pan for each pancake. Cook 2–3 mins per side until golden and cooked through.
