Fluffy Sorghum Banana Pancakes (Gluten Free & Dairy Free)

Ingredients:

  • 1 cup YesYouCan sorghum flour

  • 1 ripe banana, mashed

  • 2 tbsp coconut sugar (or sweetener of choice)

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • Pinch of salt

  • 3/4 cup plant-based milk (adjust as needed)

  • 1 tbsp neutral oil (like rice bran or canola)

  • 1 tsp vanilla extract

  • Optional: 1 egg or flax egg for extra fluffiness

Instructions:

  1. In a bowl, mix sorghum flour, baking powder, cinnamon, salt, and sugar.

  2. In a separate bowl, whisk mashed banana, milk, oil, and vanilla. Add egg if using.

  3. Combine wet and dry ingredients. Let batter sit for 5 minutes to thicken.

  4. Heat a non-stick pan over medium heat. Lightly grease.

  5. Scoop 1/4 cup of batter onto the pan for each pancake. Cook 2–3 mins per side until golden and cooked through.

  6. Serve with maple syrup, fresh fruit, or nut butter!
