Fried Polenta

Ingredients:
  • 1 cup YesYouCan fine grind polenta
  • 3 cups water
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking oil for frying (vegetable oil or olive oil)

Instructions:

  1. In a medium saucepan, bring the water to a boil over high heat.

  2. Stir in the YesYouCan fine grind polenta, salt, and black pepper.

  3. Reduce the heat to low and simmer the polenta, stirring constantly, until it thickens and becomes smooth (approximately 5-7 minutes).

  4. Pour the cooked polenta into a greased square or rectangular dish, spreading it evenly to create a smooth layer. Allow it to cool and set in the refrigerator for at least 1 hour or until firm.

  5. Once the polenta has set, remove it from the refrigerator and cut it into desired shapes, such as squares or fingers.

  6. Heat about 1/4 inch of cooking oil in a frying pan over medium heat.

  7. Carefully place the polenta pieces in the hot oil and fry until golden and crispy, about 2-3 minutes per side.

  8. Remove the fried polenta from the pan and place them on a paper towel-lined plate to remove any excess oil.

  9. Serve the gluten-free fried polenta hot as a delicious and versatile side dish or appetizer
