1 pack YesYouCan Golden Butter Cupcake Mix

2 large eggs or Vegan Egg Replacer

160ml milk (or dairy-free alternative)

80g melted butter (or oil for dairy-free version)

1½ tsp matcha green tea powder

½ cup shredded coconut
-
1 tsp vanilla extract (optional)

Extra shredded coconut for topping
Instructions

Preheat the oven to 180°C (160°C fan-forced) and line a muffin tray with 12 paper cases.

Prepare the batter: In a large bowl, combine the YesYouCan Golden Butter Cupcake Mix, eggs, milk, and melted butter. Stir until smooth.

Add flavour: Sift in matcha powder, then fold in shredded coconut and vanilla extract (if using). Mix gently until just combined.

Scoop & bake: Divide the batter evenly among the muffin cases. Sprinkle extra coconut on top for a light crunch.

Bake for 18–20 minutes, or until a skewer inserted into the centre comes out clean.

Cool & enjoy: Let muffins cool on a wire rack. Serve warm or at room temperature with tea or coffee.
