Matcha & Coconut Muffins

Makes: 12 muffins

Ingredients

  • 1 pack YesYouCan Golden Butter Cupcake Mix 

  • 2 large eggs or Vegan Egg Replacer

  • 160ml milk (or dairy-free alternative)

  • 80g melted butter (or oil for dairy-free version)

  • 1½ tsp matcha green tea powder

  • ½ cup shredded coconut

  • 1 tsp vanilla extract (optional)

  • Extra shredded coconut for topping

Instructions

  1. Preheat the oven to 180°C (160°C fan-forced) and line a muffin tray with 12 paper cases.

  2. Prepare the batter: In a large bowl, combine the YesYouCan Golden Butter Cupcake Mix, eggs, milk, and melted butter. Stir until smooth.

  3. Add flavour: Sift in matcha powder, then fold in shredded coconut and vanilla extract (if using). Mix gently until just combined.

  4. Scoop & bake: Divide the batter evenly among the muffin cases. Sprinkle extra coconut on top for a light crunch.

  5. Bake for 18–20 minutes, or until a skewer inserted into the centre comes out clean.

  6. Cool & enjoy: Let muffins cool on a wire rack. Serve warm or at room temperature with tea or coffee.
